Acc. to Wikipedia, bannock is a flat bread made on a griddle or stone in the fire, esp. in the British Isles.  In Rhode Island, we have a local specialty:  jonnycakes, made from open-pollinated stone-ground white flint corn.  You mix the ground  meal with boiling water and salt,  --some say sugar or milk as well--and fry spoonsful on an oiled  griddle or in a frying pan. You can add chopped apples to the pan as they cook, or mix raisins, or dried fruits into the batter.  Good as is as traveling journeycakes, but best with butter and real maple syrup.  Goes well with fried fish or scrambled eggs.  LInda  PS  Supposedly invented by local Native tribes.  PPS  You can also mix up any variety of breads adn cook in/near the fire as ash bread, or on a stick as twist bread the way the Boy Scouts do.
