Actually I was thinking of Italian "crusca" (as in "Accademia della Crusca", 
The Bran Academy, the Italian language regulator), for which a French cognate 
could be "crûque" if there were such a word. It's actually from a Lombard word 
of unknown origin, and "crûche" is a more likely form for the cognate.
